Dailuaine is rarely seen as a single malt bottling making it all the more collectable. Their set-up – six large stills, condensers – suggests that a light style should be produced, but instead it produces a heavy ‘meaty’ make thanks to long fermentation, rapid distillation and the use of stainless steel in the condensers to cut down on copper interaction.
Dailuaine distillation process results in a robust, almost smoky character, despite being an unpeated whisky.
This vintage 2007 single cask malt brims with bold orchard fruits with buttery baked pears, green apples and strawberries with cream on the nose. The fruitiness carries through on the palate with a general cereal character building into vanilla and icing sugar with a short to medium crescendo of white pepper, vanilla, red apples and pencil shavings.
Only 743 bottles exist globally.
